Classic apple pie
INGREDIENTS: 
8 cups apples, sliced 4 Tbs. unsalted butter 3/4 or 1 cup sugar, to taste 3/4 tsp. cinnamon Pinch of salt Homemade double pie crust
DIRECTIONS: 
Preheat oven to 425°F. In a wide pan, heat butter until sizzling. Add seven cups of apples and toss. Cover, and cook over medium heat for five minutes. Stir in sugar, cinnamon, and salt. Turn heat to high and leave uncovered. Swirl the pan occasionally as apples cook (five minutes or until the bubbles slow and the liquid is syrupy). Turn out onto a sheet pan to cool and mix in the remaining cup of apples. Once at room temperature, pour into bottom crust. Cover with top crust, carefully seal the edges, and cut vents. Put pie on a sheet pan. Bake on lowest rack for 45 minutes to an hour, until juice bubbles out of vents and crust is golden brown.
