Mititei (Grilled Minced Meat Rolls)
2 lbs. ground beef 1/2 lb. ground pork 1/4 tsp. salt (plus extra to taste) 1/4 tsp. ground pepper 1/2 tsp. juniper berries 1/2 tsp. caraway seeds 2-3 garlic cloves, minced 2-3 Tbs. beef broth 1/2 tsp. baking soda 2-3 Tbs. water
Combine beef and pork with salt, pepper, juniper berries, caraway seeds, and garlic. Add broth and baking soda, and blend mixture by hand. Add water, a little at a time, until thoroughly mixed. Refrigerate for four hours. With wet hands, take tablespoons of mixture and shape into rolls, approximately two to three inches long and one inch thick. Before placing on grill, grease rolls with oil. Cook for seven minutes on each side over medium flames.
