From creative takes on the ordinary—think honey peanut butter and mint double chocolate chip—to the extraordinary, including blueberry-white chocolate oatmeal and the popular Ron Swanson, a blend of bacon, Jack Daniels, and maple syrup, the Appalachia Cookie Co. in Boone knows how to do it right. And the proof is in the more than 1,200 melt-in-your mouth mounds of gooey goodness made fresh each day. For the holidays, owner David Holloman offers a pumpkin spice cookie. “It’s got a pumpkin pie texture with a unique blend of spices not found in stores,” he says. “And it’s delicious.” So as not to reveal his signature spice blend, here, Holloman offers a slightly different, but equally delicious, version of the seasonal treat.
