Cranberry-Orange Nut Bread
DESCRIPTION: 
(Yields One loaf)  
INGREDIENTS: 
2 cups flour 1/3 cup sugar 1 Tbs. baking powder 1/4 tsp. salt 1 tsp. cinnamon 1/4 tsp. freshly grated nutmeg Zest of one large orange 2/3 cup orange juice 2 large eggs, lightly beaten 6 Tbs. butter, melted 1¼ cup fresh cranberries, whole 1/2 cup walnuts, toasted & chopped
DIRECTIONS: 
Preheat oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment paper. Sift flour, sugar, baking powder, salt, cinnamon, and nutmeg into a mixing bowl. Stir in orange zest. Make a well in center of mixture and add orange juice, eggs, and butter. Mix gently until almost combined, then add cranberries and walnuts. Stir until just blended. Pour batter into bread pan and bake for 50 minutes. A toothpick will come out clean when thoroughly baked and the sides will begin to pull away. Cool in pan for 10 minutes. Gently remove from pan, pull away the paper, and allow to cool completely. Slices can be served toasted.
